Welcome to the El Toro Gourmet Meats Recipe Page.
To truly get the most enjoyment out of the meals you prepare it takes two things: the best quality product and the proper preparation. To help you with the preparation part, we have provided this library of recipes. We will be adding to this recipes section each month, so check back often. If you need additional help with your preparation, don't hesitate to ask. We are more than happy to help you with preparation tips on any of our gourmet products. Enjoy!


Bar-B-Que Ribs
Baby Backs, Country Ribs, Spare Ribs, etc.
Place seasoned ribs in a shallow baking pan. Add a small amount of water or apple juice. Seal with foil. Pre-heat oven to 225 degrees. Bake ribs for 2-2 1/2 hours. Add sauce and bar-b-que an additional 15-20 minutes.
Lobster Tails
Place split lobster tails in about 2-4 inches of boiling water. Water will stop boiling. When water re-boils, time for 6-8 minutes. Remove tails and place in ice water...Then finish cooking tails on bar-b-que or broiler for an additional 6-8 minutes.
Prime Rib
a.) Preheat Oven to 500 degrees.
b.) Season room temperature rib. Use our "Prime Rib and Roast" seasoning.
c.) Put in 500 degree oven for 10 min.
d.) Reduce oven temp to 325 and cook for 13-15 minutes per pound.
e.) Internal temperature for medium rare is 135 degrees. Pull roast out and let stand for 20-30 minutes, carve, serve.
f.) Enjoy!

Pork Roasts
a.) Preheat Oven to 325 degrees.
b.) Season pork roast. Cover with foil tent. Put in oven.
c.) Cook roast for 30 minutes / pound
d.) Remove foil tent for the last 30 minutes.
e.) Internal temperature should be 150-165.
f.) Suggested seasoning- cloves, orange marmalade, and brown sugar.

Tri-Tip Roast
a.) Oven Method: Pre-heat oven to 500 degrees and cook for 20 minutes. Turn oven down to 350 degrees and cook for an additional 25-30 minutes. Don't Turn. Cook with fat side up.
b.) Bar-B-Que Method: Sear Tri-Tip for 1 1/2 minutes per side on a high heat. Cut bar-b-que down to a med-high heat and cook for an additional 25-30 minutes. Internal temperature should be 130 degrees, 135 degrees for medium rare. Carve against grain.

Brisket or any Pot Roast
Cover roast with water and season. Cook in a 275-300 degree oven for 2 1/2 hours. Add hard veggies (carrots, celery, potatoes, onions, etc.) Continue to simmer for additional hour. Keep plenty of water in pan.
Turkeys
a.) Preheat Oven to 325 degrees.
b.) Season room temperature turkey, cover with foil.
c.) Cook for 15-18 minutes / pound.
d.) Remove foil for the last 45 min. Baste bird every 15 minutes.
e.) Internal temperature at the thigh joint should be 165-170 degrees.
f.) Remove from oven, let stand 20 minutes, carve and serve.

Leg of Lamb
a.) Preheat Oven to 325 degrees.
b.) Season leg. Cover with foil tent. Put in oven.
c.) Cook roast for 18-20 minutes / pound.
d.) Internal temp should be 140 degrees.
e.) Let roast stand 20 minutes. Carve.
f.) Suggested seasoning- garlic powder, our "Creamy Sicilian" dressing, or Scott's Mediterranean Garlic Marinade
